Serves 2 (as a side)
- 1.5 cup Pumpkin – cut into 2cm cubes
- 1 bunch Broccolini or ½ head Broccoli
- ½ cup cooked Buckwheat (approx 1/4 cup uncooked)
- 2 cups Rocket
- 3 Tbsp Orange Juice
- 3 tsp Seeded Mustard
- 1 tsp EVOO
- 1 Spring Onion
- Roast Pumpkin pieces at 180 degrees until cooked through (about 25 minutes)
- Add Broccolini for the final 5 minutes
- Cook Buckwheat according to the packet instructions
- Combine Pumpkin, Broccolini, Buckwheat and Rocket.
- Combine dressing ingredients – add to salad and enjoy!
